Oatmeal Peanut Butter Cookies

I made cookies this evening! Kent threw out his back yesterday so he's been upstairs all day. I knew these would make him feel better. (and they did)

I adapted a recipe that i'll share with you. :)

Oatmeal Peanut Butter Cookies

1 1/2 cups firmly packed brown sugar
1/2 lb butter softened (2 sticks)
3/4 cup peanut butter (not reduced-fat)
2 eggs
2 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teasoon baking soda
1/4 teaspoon salt (optional)
2 cups Oatmeal (quick or old fashioned, uncooked)

Prep.
Heat oven to 350 degrees. In large bowl, beat sugar, butter, and peanut butter until creamy.
Add eggs and vanilla; beat well. Add combined flour, baking soda and salt; mix well
Add oats; mix well

Drop dough by level 1/4 cup portions 3 inches apart onto ungreased cookie sheets.

Bake 12 to 14 min or until cookies are slightly firm to the touch (do not overbake) Cool
1 minute on cookie sheets; remove to wire rack. ENJOY!!!!
